Blog: Boring Chuck’s Cincinnati Chili Mac

RECIPE

Spice Mix
4tbsp chili powder
2tbsp dried minced onion
2tsp cinnamon
1tsp cumin
1/2tsp kosher salt
1/2tsp garlic powder
1/2tsp cayenne or crushed red pepper flakes
1/2tsp nutmeg
1/4tsp ground clove
1/4tsp allspice
2 Bay leaves

2lbs ground beef
1qt./4C Beef stock
2 8oz. cans of tomato sauce
1 6oz. can tomato paste
2tbsp Apple cider vinegar
2tsp Worcestershire sauce

Combine spices in small vessel and set aside. Brown ground beef in four quart sauce and drain. Return beef to pot and add in beef stock, tomato sauce, tomato paste, vinegar, Worcestershire sauce, and the spice mix. Stir well and bring to a low boil, then reduce heat and simmer uncovered for three hours stirring occasionally. After three hours, remove bay leaves and enjoy.
