EJ makes some tomato sauce with the help of the grill.
You will need:
2 lbs of tomatoes (cut into wedges)
1 small onion (cut into wedges)
1 celery stalk
1 large carrot or a handful of baby carrots
5 cloves of garlic minced
1/4 cup fresh basil
2 tbsp extra virgin olive oil
1 cup of red wine
1 tsp tiger sauce
1 tsp dried oregano
salt and pepper to taste
Directions:
Place tomatoes, carrot, celery, and onion on a wire rack. Heat grill with direct heat. Place veggies on direct heat and turn after 5 minutes. Cook for another five minutes for a total of ten minutes. Let come to room temperature and peel off tomato skins.
Place veggies in food processor and pulse until a chunky sauce is formed. Place in instant pot or just a stovetop pot along with 1 cup of red wine, garlic, chopped basil, olive oil, tiger sauce, and oregano. If in the instant pot, high pressure for 30 minutes. If in a pot on the stove, simmer for an hour. Sprinkle with salt and pepper to taste.
Pour over pasta and enjoy!
