Blog: Nina’s Vegetable Couscous

RECIPE

1/4 cup each diced
Onion
Cauliflower
Multi colored bell peppers
Butternut squash

Couscous 2 cups
Earth Balance buttery spread 4tbs
Granulated garlic to taste
Salt to taste

Roast or sauté vegetables to desired firmness. Season to taste.

Boil one and a half cups water, mix in couscous and remove from heat. Allow to sit covered for 4 or 5 minutes. Fluff with fork.

Mix vegetables, Earth Balance, and couscous. Salt to taste. Serve warm.
