Blog: Jon’s Mom’s Christmas Apple Cake

1 cup vegetable oil
3 duck eggs (you can also use 2 large chicken eggs)
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 heaping tablespoon ground cinnamon
1 teaspoon baking soda
½ heaping teaspoon salt
5 apples – peeled, cored and chopped into random sizes. I used Granny Smith, Macintosh and 1 Pink Lady. Pick smaller apples.
Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 1970’s Bundt Pan using Crisco.

Beat oil and eggs in a mixing bowl with an electric mixer until creamy.
Add sugar and vanilla. Beat until fully mixed, about 2 minutes.

Stir together flour, cinnamon, baking soda, and salt in a bowl. Mix with a fork until evenly mixed.

Slowly add flour mixture to egg mixture; mix until combined. The batter will be very thick. Mix with a mixer on low to medium speed.

Fold in apples by hand using a wooden spoon. Spread batter into the prepared pan.

Bake cake in the preheated oven until a toothpick inserted into the center comes out clean, about 55 minutes. Cool for 10-15 mins in pan. I use a cake loosening tool to loosen up the edges. Invert onto cake plate.
